Frequently Ask Questions:
Can I make this Broccoli Cheddar Soup on the stove top? Of Course!
- Sauté the garlic and onion. In a large soup pot or Dutch oven, melt 1 tablespoon of butter over medium heat. Add the onion and garlic, cooking them until they are soft and fragrant, which should take approximately 5 minutes.
- Make the Roux. In the same pot, melt four tablespoons of butter, then add flour and cook for 2-3 minutes until thickened. Gradually whisk in milk and half-and-half to create a creamy base, then slowly add broth to thin it out. Let it simmer for about 10 minutes, whisking occasionally.
- Add Veggies. Add broccoli, carrots, and spices to the thickened soup base. Simmer for about 20 minutes until the broccoli is vibrant green and tender.
- Grate and Add Cheese. Remove the pot from heat and let it cool briefly. Stir in most of the cheese until melted. Serve in bowls with extra cheese on top and crusty bread for dipping. Enjoy this cozy moment!
Can I make this Broccoli Cheddar Soup in the Instant Pot? Absolutely!
- Sauté Vegetables. Begin by setting the Instant Pot to the sauté mode on the normal/high setting for a couple minutes. Add 2 tablespoons of butter along with onion, celery, garlic, and carrots. Sauté for 3 minutes, stirring frequently, until the vegetables become tender.
- Cook Vegetables. After the sauté cycle, add chicken broth, salt, pepper, and broccoli; stir and set the pressure cooker to high for 2 minutes, then release pressure.
- Make Roux. Mix melted butter with flour in a bowl to create a smooth roux.
- Once pressure is released, stir the pot contents, return to sauté for about 10 minutes, add milk, half and half and roux, stirring for 1 minute. Boil for 5-8 minutes, stirring continuously for 2 minutes to thicken.
- Allow Soup to Cool. Turn off the Instant Pot, cool the inner pot for 5 minutes on a trivet.
- Add Cheese. Gradually mix in cheddar cheese, one cup at a time.
- Serve. Serve the soup, optionally garnished with extra cheddar cheese.

this looks easy and can’t wait to try it this weekend.
Can’t wait to hear how it turns out!
I tried making this, and I consider myself to be a pretty good cook.
However, making this in a slow cooker is a serious mistake.
I used a good quality cheese, no substitute or “fake cheese”.
I followed the slow cooker directions exactly, and 7 hours on low it caused the cheese to separate, making a thick layer of oil and grease on the top.
It truly was inedible.
The ingredients are right, but this type of soup is not meant to be made in a slow cooker. I ended up just throwing it all out.
Have you folks on the website actually made this?
And if you did, you need to provide better guidance for the slow cooker recipe.
Hi Flip – I am sorry to hear this. I am not sure what happened as I have never had the cheese separate or get greasy. I have made the soup many times. Did you grate the cheese yourself? What brand did you use?
I agree with above comment. I let mine cook on low for 7-8 hrs and it was chunky and the cheese was still in shreds and not melted. Very discouraging:(
What brand of cheese did you use?
