Crockpot Creamy White Lasagna Soup is the perfect comforting dish for a cold evening. I enjoy preparing this meal and allowing it to simmer throughout the day while I work. When it’s time for dinner, serving this delightful soup that everyone loves makes the meal both easy and enjoyable.




Each time I make this crockpot dish, my kids devour it and always ask for seconds. I believe it’s the cheese that makes it irresistible, but regardless, they finish with happy tummies, and I feel wonderful knowing they’ve enjoyed some spinach without even realizing it! It’s all about those small victories!

Ingredients:
- 8 ounces cream cheese (I used a block of Philly) softened 30 sec in microwave
- 1 tablespoon olive oil
- 1/2 medium onion chopped
- 4 cloves garlic minced
- 1 TBSP Italian seasoning
- 6 cups chicken broth
- 1 cup heavy/whipping cream
- 10 lasagna noodles broken into small pieces
- 1 pkg Italian Sausage cooked & crumbled
- 1 Garlic & Fine Herbs Boursin Cheese
- 1 cup freshly grated parmesan cheese
- 2 cups (packed) fresh baby spinach
- Salt & pepper to taste
Instructions:
- Soften Cheese. Microwave the cream cheese in 20-30 second intervals until it’s very soft.
- Brown Sausage. Heat olive oil in a skillet over medium-high heat. Add the sausage and brown.
- Sauté Onions. Add olive oil to crockpot & onions.
- Combine Ingredients. Add crumbled sausage. Pour in chicken stock. Next add garlic and sprinkle in the Italian seasoning and salt & pepper.
- Pour in Cream and Cream Cheese. Add the heavy cream and softened cream cheese. Stir to combine.
- Add Noddles. Break up 10 lasagna noodles and add to crockpot.
- Add in the Boursin Cheese. Mix in Garlic & Fine Herbs Boursin Cheese.
- Cook. Cover and cook low 6-7 hours or high 3-4.
- Add Spinach. Stir in the parmesan and spinach and let the cheese melt in and spinach wilt for a few minutes. Season with salt & pepper as needed. The soup should be at a good thickness by now (not super thick but not thin either), but if you want it a bit thicker, let it cook for a little longer (it also thickens as it sits and the pasta absorbs the broth). If it’s too thick, add in another splash of broth or cream.
- Enjoy! Serve with crusty bread and a side salad.
