Ingredients for Texas Party Bites:

Traditionally known as Iowa Party Bites, I decided to rename my recipe Texas Party Bites since we live in Texas and I’ve added my own twist! The secret ingredient? Rotel!
Ingredients:
- 1 (16 oz) pork sausage
- 1 (10 oz) bag Tostitos Scoops tortilla chips
- 1 (8 oz) block cream cheese, softened
- 8 oz shredded mozzarella cheese
- 1 large egg
- 1 (15 oz) can sweet corn, drained
- 1 (15 oz) can diced tomatoes with green chiles (mild or medium), drained
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese (for topping)
Instructions:
- Preheat the Oven. Set your oven to 425°F (220°C).
- Prepare baking sheet. Lightly grease your baking sheets or line them with parchment paper.
- Brown the sausage. Cook your sausage in a medium skillet.
- Prepare the Chips. Arrange the Tostitos Scoops tortilla chips on the prepared baking sheets with the cup side facing up, ready for filling.
- Mix the Filling. In a large mixing bowl, blend together softened cream cheese, shredded mozzarella, an egg, sweet corn, three-quarters of a drained can of Rotel, garlic powder, salt, and black pepper. Add in cooked sausage. Stir until all ingredients are thoroughly combined.
- Fill the Chips. Spoon approximately 1 tablespoon of the filling into each tortilla chip cup, ensuring they are generously filled.
- Add Parmesan Topping. Sprinkle grated Parmesan cheese over the tops of the filled chips to enhance flavor.
- Bake. Place the baking sheets in the preheated oven and bake for 13-15 minutes, or until the tops turn golden and the cheese is bubbling.
- Serve. Remove from the oven and allow to cool slightly before serving. Enjoy these warm, cheesy, and savory bites!

You can also use the filling as a dip! It’s incredibly easy: simply mix your ingredients, and instead of placing them into corn chip cups to create bites, pour the mixture into a casserole dish. Bake it at 350° for 25 to 30 minutes.
