Crockpot Cheesy Sausage Potato Soup

Are you in search of another tasty soup to enhance your menu? If you’re anything like me, you’re always on the lookout for new dinner ideas to incorporate into your weekly routine. With busy schedules, we all appreciate simple dump-and-go crockpot recipes. This Crockpot Cheesy Sausage Potato Soup is a delightful twist on a recipe I’ve relied on multiple times (thank you, Chelsea Lords!), and it has quickly become a family favorite!

Crockpot Cheesy Sausage Potato Soup is really a comforting dish that’s perfect for chilly evenings or when you’re craving something hearty and delicious. The combination of savory sausage, tender potatoes, and rich, creamy cheese creates a flavorful medley that warms you from the inside out, especially after a long day.

Ingredients:

Instructions:

  1. First, brown Italian sausage in a skillet.
  2. While the sausage is browning, chop the carrots, celery, onions, and potatoes. I personally find that using my onion chopper saves a lot of time, but if you’re using a mirepoix mix, you can skip chopping the carrots, celery, and onions altogether.
  3. Next, place the sausage into the crockpot. Add all the vegetables and garlic, then pour in the chicken stock, along with ½ cup of milk, ½ cup of heavy cream, and the sour cream.
  4. Finally, add the flour, butter, basil, salt, and pepper into the crockpot. Stir the mixture until the flour is fully dissolved and all ingredients are combined.
  5. Lastly, Cook on low for 8 hours or on high for 4 hours.
  6. Shred 2 cups of sharp cheddar cheese, I suggest using sharp for its robust flavor in this recipe. It’s best to shred the cheese yourself, because pre-shredded varieties can clump together. Add the cheese in the last 10 minutes before serving and stir until well combined.
  7. Enjoy!
