Buttermilk Pumpkin Mashed Potatoes

Buttermilk Pumpkin Mashed Potatoes are a delightful twist on a classic side dish that brings a touch of autumn warmth to your table. The creamy texture of the mashed potatoes is enhanced by the subtle sweetness of pumpkin, while the tangy buttermilk adds depth and richness. A sprinkle of cinnamon and nutmeg infuses the dish with cozy spices, making it perfect for holiday gatherings or a comforting family meal. Serve it alongside roasted turkey or glazed ham for a festive feast, or enjoy it on its own as a satisfying treat.

I’ve had a fondness for instant mashed potatoes since my childhood. There’s something about their creaminess that can’t quite match the mashed potatoes my mom made from boiled ones. In this recipe, I use Idahoan Buttery Homestyle Mashed Potatoes, which evoke all the nostalgic feels from my younger days. No matter your preference, this recipe will certainly offer a delightful twist on a Thanksgiving classic.

7- Ingredients for these Creamy Buttermilk Pumpkin Mashed Potatoes

  1. Prepare Mashed Potatoes. If you’re using Idahoan Buttery Homestyle Mashed Potatoes, simply follow the instructions provided on the package. Otherwise, place the potatoes in a large pot and cover them with one inch of water. Stir in one tablespoon of salt. Bring the water to a boil over high heat, then lower the heat to medium and let it simmer. Cook until the potatoes can be easily pierced with a paring knife or fork, which should take about 15 to 18 minutes.
  2. Combine Ingredients. In a bowl, mix together pumpkin, buttermilk, butter, thyme, and nutmeg; then set the mixture aside.
  3. Mash the Potatoes (Skip this step if using instant). Drain the potatoes, then place them back in the pot over low heat. With a potato masher, mash the potatoes until just a few small lumps are left.
  4. Combine all the ingredients thoroughly. Take the pot off the heat and incorporate the pumpkin mixture into the mashed potatoes. Using a rubber spatula, gently fold the ingredients together until they are just combined. Season the potatoes with salt and pepper before serving.
  5. Enjoy!
