Lucky Charms Cookies for St Patrick’s Day

Lucky Charms cookies are soft, chewy sugar cookies with Lucky Charms marshmallows mixed in and placed on top when they are hot out of the oven. So magically delish! They are the perfect St Patricks Day treat to make with your family in March.

INGREDIENTS

1 cup unsalted butter – softened
1 1/4 cups granulated sugar
1 egg – at room temperature
2 teaspoons vanilla extract
2 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
2 cups Lucky Charms marshmallows – divided

• Preheat oven to 350°
• Combine sugar & butter of mixing bowl w/ paddle attachment & cream until light & fluffy
• Add egg & vanilla – beat until combined
• Add flour, baking soda, baking powder & salt & mix until just combined
• Stir in @luckycharms marshmallows (save some for the top!)
• Scoop & roll into 2TBSP balls
• Bake 9-11 min until tops are set
• Remove from oven & immediately press remaining Lucky Charms onto the tops.

Cool for 5 minutes & serve!
I love finding ways to make holidays extra special for my kids. Baking is one easy way to get kids into the holiday and make memories. I encourage you to make these cookies and enjoy them while reading a St Patrick’s Day book or building a leprechaun trap. Happy St Patrick’s Day Y’all!

XO, kRISTEN
