Lucky Charms cookies are soft and chewy sugar cookies, featuring Lucky Charms marshmallows both mixed into the dough and sprinkled on top while still warm from the oven. They’re magically delicious! These cookies make for an ideal St. Patrick’s Day treat to whip up with your family in March.

Ingredients:
- 1 cup unsalted butter – softened
- 1 1/4 cups granulated sugar
- 1 egg – at room temperature
- 2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 cups Lucky Charms marshmallows – divided
Instructions:
- Preheat the Oven. Begin by setting your oven to 350°F.
- Prepare the Cookie Sheet. Line a cookie sheet with parchment paper.
- Mix Wet Ingredients. In a stand mixer, blend the butter and granulated sugar using the paddle attachment until the mixture becomes light and fluffy.
- Add Egg and Vanilla. Add the egg and vanilla, then mix until everything is well combined.
- Combine the Dry Ingredients. Gradually mix the dry ingredients into the wet mixture, ensuring all the flour is fully incorporated.
- Fold in @luckycharms Marshmallows. Stir in the Lucky Charms marshmallows, remembering to reserve some for topping!
- Shape the Cookies. Scoop and roll the dough into balls, each about 2 tablespoons in size, and place them on the prepared cookie sheet.
