This year, I find myself wishing for fall to come earlier, hoping for cooler temperatures and a break from the dogs using the pool every day! If you’ve been keeping up, you’ve likely witnessed the amusing antics at our new home, with the dogs enjoying their time swimming in the pool whenever they please. On the downside, there’s the not-so-pleasant wet dog smell that accompanies our swimming furry friends! All that to say, I plan on whipping up a delightful and easy Pumpkin Chili this weekend, even though fall hasn’t quite arrived.
The recipe is simple but incredibly flavorful, combining the rich, earthy taste of pumpkin with the comforting spices of chili. I’ll start by browning the ground turkey and draining the meat. Then, I add in the onions and garlic until they’re golden and fragrant. Next, I’ll add the chopped green chiles. The star ingredient, of course, will be the pumpkin puree, which will lend a creamy texture and a hint of sweetness to the Pumpkin Chili.
To spice things up, I’ll stir in chili powder. The two cans of white northern beans will add heartiness, making the chili both nutritious and filling. The chicken broth will bring everything together, slow cooking until the flavors meld into a harmonious blend.
I’ll serve the Pumpkin Chili with a dollop of sour cream, a sprinkle of shredded cheese, and a handful of red onion. - 2 15 oz cans white northern beans rinsed and drained
- 15 oz can pumpkin puree
- 4.5 oz can chopped green chile
- 2 cups low sodium chicken broth
- kosher salt and pepper to taste

- red onion,
- Greek yogurt or low-fat sour cream,
- mini pumpkin shaped monterey jack cheese

- Brown the meat. Start by cooking the turkey until done, then drain the meat.
- Chop veggies. I enjoy using my onion chopper to swiftly dice the onions. You can mince the garlic yourself or opt for pre-minced garlic.
- Mix Ingredients. Combine all remaining ingredients in the crockpot, stirring well to blend.
- Cook the chili. Slow cook on low for 8 hours or high for 4 hours.
- Enjoy! Serve the chili with your favorite toppings and savor!
