Crockpot Loaded Baked Potato Soup

Loaded Baked Potato Soup made in a crockpot is a simple one-pot dish that’s ideal for warm and snug winter evenings! This loaded baked potato soup recipe is the simplest you’ll ever come across.

Imagine coming home after a long day to the comforting aroma of creamy Loaded Baked Potato Soup simmering away in your crockpot. This hearty and delicious dish is the perfect way to warm up on chilly winter nights. With tender potatoes, crispy bacon, melted cheese, and a touch of chives, each spoonful is a comforting hug in a bowl. Simply set it and forget it, then ladle out a steaming bowl of this cozy soup to enjoy by the fireplace. So go ahead, let the slow cooker do all the work while you unwind and savor the flavors of this soul-soothing soup.

Using diced hash browns will save you time and effort – no need for peeling and chopping! I whip up this recipe at least once a month, even during the summer, simply because it’s delicious!

I am thankful for my trusty onion chopper; cooking just wouldn’t be the same without it. It seamlessly incorporates onions into any dish, simplifying the cooking process.

Mix all your ingredients in the crockpot and let them simmer throughout the day. This dish pairs well with crusty bread and offers room for customization; if you feel like adding corn, go ahead and add some. Here’s the secret touch – besides cream cheese, I also include Boursin shallot and chive cheese. I assure you, once you try this, you won’t want potato soup any other way.

As it cooks, prepare a small topping bar. Our favorites include shredded cheese, sour cream, green onion, and bacon. My kids love adding their own toppings to their meals!

Ingredients:

  • 32 oz frozen diced hash browns
  • 10.5 oz cream of chicken soup
  • 32 oz chicken stock
  • 1 onion diced
  • 1 ranch packet
  • 8 oz cream cheese
  • 1 shallot & chive Boursin
  • cheese salt & pepper

Toppings:

  • bacon cooked and crumbled
  • shredded cheese
  • green onions-chopped
  • sour cream

Instructions:

1. Combine in crockpot. Put everything together in the crockpot.

2. Cook. Cook on high for 4 hours or 8 hours on low.

3. Add toppings. Top your dish with shredded cheese, sour cream, green onion, and bacon.

* serve with crusty bread & a side salad
