Crockpot Creamy White Chicken Chili

Crockpot Creamy white chicken chili is a meal that the entire family will enjoy. It’s hearty and comforting on a chilly winter evening, and it offers generous servings. Serve it with a dollop of sour cream, a sprinkle of fresh cilantro, and a side of warm cornbread for a complete and satisfying meal that will surely become a family favorite.

Ingredients for white chicken chili

It’s easy to keep all the necessary ingredients for this quick meal on hand. The primary ingredient is chicken; I prefer using rotisserie chicken for added convenience, but feel free to use any type of chicken you prefer.

I’m so grateful for my reliable onion chopper; I can’t imagine cooking without it. It effortlessly adds onions to any recipe, making the process much easier.

I adore this recipe because it’s a one-pot wonder that you can simply set and forget. Being a busy mom, it truly simplifies my life.

Add a can or two of beans, a can of corn, and then add your diced chiles into the crockpot. Opt for mild green chiles if children will be eating, but if you prefer spice, choose medium or hot. After that, include garlic, chicken broth, and quarter a lime for fresh lime juice. For added flavor, throw in the whole lime. Then, add the spices and fresh cilantro.

Set crockpot to cook on low for 8 hours or on high for 4 hours. Stir in cream cheese until smooth. Serve with extra toppings such as: lime juice, avocado, cilantro, cheese, tortilla strips, etc.


  • 1 TBSP olive oil
  • 1 onion chopped
  • 2 cups shredded chicken
  • 1 TBSP minced garlic
  • 2 cups chicken broth
  • 2 (14 ounce) cans white beans drained
  • 4oz can mild green chiles
  • 1 can corn
  • 1 lime quartered
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp oregano
  • 2 TBSP cilantro chopped
  • salt and pepper to taste
  • Toppings: (optional to taste): lime juice, avocado, cilantro, cheese, tortilla strips, etc.


  1. Combine all ingredients. Add all ingredients into the crockpot and stir until combined.
  2. Cook Time. Cook on low for 8 hours or on High for 4 hours.
  3. Stir. Stir in cream cheese until smooth.
  4. Serve. Serve with your favorite toppings.
