Crockpot Creamy Tomato Basil Soup

Let’s make a crockpot meal that you’re going to want to make again and again!

It’s soup season and this creamy tomato basil soup is such a comfort food. I promise you even the pickiest of eaters will eat this. My kids are 9 and 6 and they absolutely love this with a gooey grilled cheese, and so do I!

The beauty of this soup is it doesn’t come from a can. You make it with fresh ingredients!


I start out with 8-10 tomatoes. I like to add a red pepper, but this is totally optional if it’s not a favorite in your house. It has a lot of onion, thankfully I have my onion chopper– I love this thing!

We like a lot of garlic, but you can definitely add less. Add in basil, olive oil, and seasoning and give it a good stir. The last ingredient is the most important, it’s the Boursin Cheese. This is where you get the creaminess and herb flavors.

I let this cook for 8 hours on low or 4 hours on high. Use an immersion blender to blend it all together. Creamy goodness!



      • 8-10 Tomatoes Chopped

      • 1 Red Pepper

      • 1 Yellow Onion Chopped

      • 3-5 Whole Garlic Cloves

      • 1 Boursin Cheese Garlic and Herb blend

      • 10 Basil Leaves 

      • 2 tbsp Olive Oil

      • 1 TBSP Salt 

      • 1 tsp Pepper, Garlic Powder & Paprika each

      • Parmesan Cheese, Croutons & Basil for topping 


        1. Make the Tomato Soup: Add 8-10 chopped tomatoes, chopped red pepper, chopped onion, garlic, basil, and seasoning into the crockpot. Stir all ingredients together. Last add the Boursin Cheese Garlic and Herb blend.
        2. Time to Cook: Cook on low 8 hours / high 4 hours.
        3. Blend the Tomato Soup: Blend everything together using a food processor or immersion blender.  Blend until combine Let cool for a minute.
        4. Garnish and Serve: Garnish with Parmesan cheese, croutons & basil.  Serve with gooey grilled cheese & enjoy
