Crockpot Creamy Sun Dried Tomato Chicken 

Crockpot Creamy Sun-Dried Tomato Chicken, also known as Marry Me Chicken or Crock Pot Chicken, features chicken breasts cooked in a luscious sun-dried tomato sauce. Typically, the sauce consists of ingredients like heavy cream, garlic, and sun-dried tomatoes. This decadent Tuscan-inspired dish is a delightful choice for a special celebration or anniversary.

You can enjoy it with pasta, rice, or as a delicious topping on a creamy serving of crock pot cheesy scalloped potatoes for a satisfying meal. To enhance the dish, consider incorporating spinach, white beans, and shredded carrots to add more vegetables and protein.


  • 4 boneless skinless chicken breasts
  • 2 cups chicken broth
  • 1 TSP salt
  • 1 TSP pepper
  • 1 TSP onion powder
  • 1 TBSP Italian Seasoning
  • 1 TBSP minced garlic
  • 1/4 cup fresh basil + more for garnish
  • 1/2 cup sun dried tomatoes in olive oil 
  • 1 garlic & herb Boursin Cheese
  • 2 cups heavy cream
  • 1 TBSP Corn Starch
  • 16 oz pasta cooked
  • 1/2 cup grated parmesan cheese


  1. Cook chicken. Start with placing the chicken in the crockpot.
  2. Add chicken stock. Pour chicken stock over chicken.
  3. Sun-dried tomatoes. After the stock is in the crockpot, place sun-dried tomato’s on top of the chicken.
  4. Combine seasonings. Next, add your salt, pepper, onion powder, Italian seasoning & garlic into the crockpot.
  5. Add Basil. Slice basil & add on top of chicken.
  6. Add delicious cheese. Place Boursin cheese on top.
  7. Go time. Cover & cook on low 6-8 hours or 4 hours on high until chicken is tender.
  8. Make the sauce pop! Lastly, mix heavy cream & cornstarch together. Stir until smooth. This will help thicken the sauce.  Pour gently into slow cooker & stir very gently so you don’t break up the chicken (it is really good even if it’s shredded chicken though!)
  9. Serve and enjoy. After it is combined serve with pasta & top with grated parmesan cheese and fresh basil.
