Creamy Pasta e Fagioli Soup

Let’s prepare this Creamy Pasta e Fagioli Soup crockpot meal perfect for this cozy fall season that your kids will adore? Here’s my twist on my Grandma’s classic Pasta e Fagioli soup recipe. Every time I cook up this soup, my kids, aged 9 and 6, absolutely love it – they’ve been enjoying it since they were toddlers.

Years back, I asked my Grandma to jot down her Pasta e Fagioli soup recipe. Every time I see that recipe card, it floods me with memories.

To start, gather all the ingredients you’ll need: carrots, garlic, and onions, some canned beans, diced tomatoes, pasta, broth, and a blend of herbs and spices. The secret to this flavorful Pasta e Fagioli lies in the Boursin cheese and the slow cooking process, allowing all the ingredients to meld together beautifully.

Simply toss everything into your crockpot in the morning, set it to low, and let it simmer away all day. The aroma that will fill your home as the soup cooks will have everyone eagerly anticipating dinnertime.

When the soup is ready, serve it up hot with a sprinkle of grated Parmesan cheese and some crusty bread on the side. The combination of tender pasta, creamy beans, and rich broth is sure to be a hit with your kids, just like it has been with mine.

  • 2 TBSP olive oil
  • 3 garlic cloves minced
  • 1 small onion-diced
  • 1/2 cup shredded carrots
  • 1 jar marinara sauce
  • 2-3 fresh tomatoes (optional)
  • 1-2 cans white beans (drained and rinsed)
  • 4 cups chicken broth
  • 1 cup uncooked ditalini pasta
  • 1/2 TSP Italian seasoning
  • 1/2 TSP salt
  • 1/2 TSP pepper
  • 1 block Boursin cheese round
  • Shredded parmesan & Mozzarella cheeses for topping

Instructions for Creamy Pasta e Fagioli Soup:

  1. Combine all ingredients. Add all ingredients into the crockpot, except the Boursin cheese, and stir until combined.
  2. Cook Time. Cook on low for 6-8 hours or on High for 2-4 hours.
  3. Stir. Stir in Boursin cheese until smooth.
  4. Serve. Serve with garlic bread and a side salad and of course top with parmesan and mozzarella cheeses.
