- 2 TBSP olive oil
- 3 garlic cloves minced
- 1 small onion-diced
- 1/2 cup shredded carrots
- 1 jar marinara sauce
- 2-3 fresh tomatoes (optional)
- 1-2 cans white beans (drained and rinsed)
- 4 cups chicken broth
- 1 cup uncooked ditalini pasta
- 1/2 TSP Italian seasoning
- 1/2 TSP salt
- 1/2 TSP pepper
- 1 block Boursin cheese round
- Shredded parmesan & mozzarella cheeses for topping
Instructions for Creamy Pasta e Fagioli Soup:
- Combine all ingredients. Add all ingredients into the crockpot, except the Boursin cheese, and stir until combined.
- Cook Time. Cook on low for 6-8 hours or on High for 2-4 hours.
- Stir. Stir in Boursin cheese until smooth.
- Serve. Serve with garlic bread and a side salad and of course top with parmesan and mozzarella cheeses.

Can this be cooked on stovetop?
Yes! Follow same instructions but use a large pot and cook for 30-45 min until noodles are al dente.
