Ingredients:
- 1 package of your favorite Top Ramen noodles – any flavor works, but I usually go for chicken
- 3 tablespoon creamy peanut butter
- 1 tablespoon of soy sauce
- 1 tablespoon of rice vinegar
- 1 tablespoon chili crisp
- 1 tablespoon red curry paste
- 1 teaspoon sriracha
- 1 teaspoon sesame oil
- 1 clove of garlic, minced – i like to use garlic paste
- 1/4 cup green onions + additional for topping
- 1/2 cup Unsweetened Coconut Milk
- sesame seeds (optional) for topping
- crushed peanuts for topping
- optional: cooked chicken or tofu – if you want some added protein
- *1 small lime



Instructions:
- Boil Water. Bring water to a boil for the Ramen, following the instructions on the package.
- Prepare the sauce. In a large skillet, combine all the ingredients except for the sesame seeds and green onions, which will be reserved for topping. Whisk the mixture until it achieves a smooth and creamy consistency. If it appears too thick, feel free to add a small splash of water to loosen it. Continue whisking to ensure that all ingredients are thoroughly combined!
- Cook the noodles. Cook the noodles for 2 to 3 minutes until they are soft yet still firm.
